When people hear the word “dandelion” they tend to think about weeding their garden in the summer or blowing the flowers’ seeds to make a wish. Place the roasted dandelion root in a pot with other spices. Add 2 cups of water and bring to a boil.  Simmer for 10-15 minutes. Strain and enjoy plain, or add milk and the sweetener of your choice.

Stems: This is the one part of the dandelion that is not commonly eaten because it contains a very bitter, milky substance that isn’t very appetizing. 

*The most important thing about eating wild dandelions is to only pick in areas that are not subject to herbicides, pesticides, fertilizers, heavy metals or other forms of chemical pollution. No matter how many times you wash them, there is no way to fully know whether or not a chemical has been eliminated.*
